The pineapple or "ananasso" was already widespread during precolombian times. It is the fruit of the pineapple tree, a bush that is cultivated mainly in Central and South America.

Eaten year-round, pineapple is particularly well-loved for its sweet pulp and for its power to refresh.

Preparation

Although it is simpler than other tropical fruit, the pineapple does require a certain level of care while preparing. Here's how to transform this fruit into a sweet note to end a meal:

  • Cut the fruit vertically into 4 parts.

  • Take one quarter, lay it horizontally and cut off the end.

  • Use a knife to separate the pulp from the core and skin.

  • Cut into wedges and serve fresh directly on the skin!

  • Pineapple is rich in water and low in fiber, making this fruit especially refreshing. It also contains bromelain, a group of enzymes which help with digestion.

  • Unlike most tropical fruit, pineapples do not keep ripening after being picked. This is why it is so important to choose pineapples that are at the right ripeness point. The fruit should be hard to the touch, with an outside colour between yellow and green, and the bushy leaves should be bright green. But your strongest ally in discovering if your pineapple is ready to eat is your sense of smell: if you can smell the typical aroma by sniffing the fruit, that means it's perfectly ripe.

  • Pineaple can grow anywhere with a mild climate. Want to try it?
    - Take a pineapple and twist the leafy top off, leaving some pulp attached.
    - Place it in a bowl of water for a few days, until you see roots appear.
    - When the roots appear long and tough, transfer the miniature bush to a pot with soil.
